About the Project
Chatkoras Pty Ltd, a well-established restaurant group in Melbourne, is introducing a new Indo-Chinese menu to expand its offerings. To support this rollout, we are seeking an experienced Chef specialising in Indo-Chinese cuisine to undertake a short-term, non-ongoing training engagement.
This project will involve working with the kitchen team at Chatkora's Restaurant to implement the new menu and train existing staff in Indo-Chinese cooking methods. The engagement is expected to run for 10–12 weeks only, after which the training will be complete and the role will end.
Role Overview
The visiting Chef will be responsible for training and mentoring our kitchen brigade in authentic Indo-Chinese culinary techniques and ensuring smooth integration of the new menu items into day-to-day operations.
Key duties and responsibilities will include, but are not limited to:
- Design and implement the new Indo-Chinese menu, introducing signature dishes and fusion items.
- Train, mentor, and upskill existing kitchen staff in Indo-Chinese cooking methods, wok techniques, flavour balancing, and presentation.
- Demonstrate preparation and cooking of signature dishes to ensure staff can replicate consistently to standard.
- Develop standard recipes and portion guidelines for the new menu items.
- Ensure compliance with food safety, hygiene, and workplace health standards during training and menu rollout.
- Advise on sourcing and selection of ingredients required for Indo-Chinese dishes.
- Supervise practice cooking sessions, providing feedback and corrections to kitchen staff.
- Monitor quality and presentation standards during the training period to ensure staff competence.
- Work collaboratively with management to evaluate training outcomes and menu integration.
- Transfer knowledge and skills to the permanent kitchen team, ensuring they are fully capable of continuing the menu after project completion.
Essential Skills & Experience:
- Demonstrated expertise in Indo-Chinese cuisine with extensive restaurant experience.
- Proven ability to train and mentor kitchen teams on new menus and specialist techniques.
- Relevant culinary qualifications or trade recognition.
- Strong understanding of food safety standards and commercial kitchen compliance.
Employment Conditions:
- Short-term contract engagement (10–12 weeks only).
- Base $38.96 hourly rate in line with the Restaurant Industry Award (above award rates).
- Accommodation and meals provided during training period.
- Employer guarantees compliance with the Fair Work Act 2009.
This is a non-ongoing role created solely for the purpose of training and upskilling the current kitchen team in Indo-Chinese cuisine. Once the training and implementation of the menu is completed, there will be no further requirement for the role.
